Chewy KOJA Almond & Berry Slice

A raw, gluten-free, refined sugar-free treat packed with healthy fats, protein and antioxidants to nourish your body.

 

WHAT YOU NEED:

-1 cup walnuts (or another nut)

-1 cup unsweetened desiccated coconut

-1/3 cup raw cacao powder

-1/4 cup raw virgin coconut oil, melted

-1/4 cup rice malt syrup or raw honey

-Pinch of salt

- 1 cup of goji berry and shredded coconut mix 

HOW TO:

-Whiz the walnuts in a food processor until you get fine crumbs, then tip into a large bowl.

-Stir through the coconut, cacao powder, melted coconut oil, rice malt syrup or raw honey and salt. Mix until everything is well combined, then stir through the goji berry and shredded coconut mix 

-Press the mixture into a small loaf tin lined with baking paper, then put it in the fridge to set. Once set, cut into squares.

-Store the slice in an airtight container in the fridge (as the coconut oil may start to melt at room temperature).

 

NOTES:

If you only have a large loaf tin or cake tin, you can just press the mixture into half of the tin so that it doesn’t turn out too flat. The mixture is quite firm, so you should be able to mould it into place before setting in the fridge.
