Roasted Chickpeas with Paprika

Below is a healthy and easy snack recipe for you to try! It is rich in fibre, protein and healthy fats so will help to keep you satiated and your blood sugar levels stable!

Chickpeas are a good source of fibre and protein, they are a great snack to enjoy and are particularly delicious when roasted. Please see the recipe below. 

Roasted Chickpeas with Paprika Recipe (Serves 2)

Ingredients

  • 1 cup of Chickpeas (cooked, rinsed)
  • 1 tbs Extra Virgin Olive Oil
  • ½ teaspoon smoked paprika
  • Sea Salt & Black Pepper (to taste)

Method

  • Preheat the oven to 200ºC and line a baking tray with baking paper.
  • Pat the chickpeas dry with a paper towel and transfer them to the prepared baking tray. Drizzle with the oil, sprinkle with paprika and season with salt and pepper to taste. Mix until the chickpeas are evenly coated.
  • Bake in the oven for 25 minutes, tossing halfway through, or until the chickpeas reach your desired crispiness. 
  • Let them cool slightly and enjoy!
