KOJA Cacao & Berry Vegan Pancake Stack Recipe

There’s nothing quite as delicious as pancakes on a Sunday morning. We've made this pancake stack recipe extra healthy by using no refined sugars or other nasties. The recipe is vegan with a gluten free option. We love topping them off with some KOJA Almond & Berry Breakfast Topper, some fresh strawberries and a raw vegan chocolate sauce. 

This pancake recipe is the perfect start to any good Pancake Sunday! 


The Pancakes

  • 1 cup wholemeal spelt flour *swap for buckwheat flour for gluten free option*
  • 1 cup almond milk  
  • 1 very ripe banana 
  • 1/3 cup rice malt syrup or maple syrup or 1 Tbs natural sweetener of choice 
  • 2 tbsp raw cacao powder (heaped) 
  • 1 tsp baking powder 


  1. In a large mixing bowl, combine the flour, cacao powder and baking powder. 
  2. In a small bowl mash the banana up, then add in the almond milk and sweetener, mixing well so you don’t have any lumps of banana. Add the wet mixture to the dry and mix well. 
  3. Take a frying pan (preferably non stick, so no need for any oil, but if not then add a dash of coconut oil) and heat it to a medium temperature. The mixture should make approx. 6 pancakes total, so roughly divide and pour the mixture with that in mind. 
  4. Cook the pancakes for a few minutes on either side. If you need to cook them separately because your pan is on the smaller side, keep the cooked ones on a plate in the oven on a low temperature so they stay warm! 
  5. While the pancakes are cooking, make the chocolate sauce as per the instructions below. 

The Chocolate Sauce 

  • 2 tbsp rice malt syrup 
  • 3 tbsp pure maple syrup 
  • 2 tbsp raw cacao powder (heaped) 


  1. In a small bowl, combine the chocolate sauce ingredients and mix well with a spoon until fully combined. 

To assemble your pancake stack, take a pancake and lay it on the plate. Then between each pancake, create a layer of sliced strawberries. When your stack is assembled, drizzle the chocolate sauce over the top, top with a few more strawberries (just for good measure) and some KOJA Almond & Berry Breakfast Topper!
