The conventional granola bars from the supermarket are often deceptively unhealthy. Sure a lot of them contain nuts and ‘wholegrains’ and claim to be healthy, but in reality they’re often laden with refined sugars and preservatives and are heavily processed- quite far from healthy! But, it’s not all bad news because making your own granola bars is super easy. These bars are full of natural sweetness plus provide a source of Iron, fibre and other essential nutrients from our Fig & Hazelnut Breakfast Topper.The best part is that they’re even drizzled with a divine raw chocolate. Who doesn't love that!?
1 ½ cups hazelnut meal (almond meal/pulp also works)
8 medjool dates, pitted
4 tbsp rice malt syrup
Take a blender and blend the medjool dates, rice malt syrup until the dates are broken up and you have a sticky mixture.
Tip the hazelnut meal and mixture from the blender into a bowl, and then use clean hands to mix everything together. You should be able to roll the mixture into small balls. If the mixture is not holding (this will depend on how ripe the dates were), then add a splash of water in small increments until the mixture holds.
Line a tin with baking paper. Tip the base mixture in and press down well. Place in the freezer to harden while you mix the granola.
In a small bowl, use clean hands to mix the Koja Breakfast Topper with the rice malt syrup.
Remove the base from the freezer and tip the granola over the top, again pressing down firmly. Return to the freezer to harden for a few hours (this makes it easier to work with!)
The Chocolate Drizzle
3 tbsp coconut oil, melted
3 tbsp pure maple syrup
3 tbsp raw cacao powder *N.B. To get the right consistency you might need to add more cacao powder if too runny or maple syrup if too thick.
In a small bowl, mix the chocolate ingredients well and tweak the quantity of raw cacao powder and maple syrup as required.
Remove the slab of granola from the freezer and the tin. Use a sharp knife to cut them into granola bar sized pieces or bites (depending on your preference), and then take a spoon and drizzle the raw chocolate over the top. Keep in the fridge in an airtight container. Enjoy!
