COCONUT YOGURT CRUMBLE

Ingredients: 

- 1 cup of coconut yogurt

- 1 koja bar (whichever your favourite is!) 

- 1/2 cup blueberries

How to: 

1. Spoon the coconut yogurt into a glass 

2. Crumble up your koja bar and add on top

3. Add blueberries to finish

Simple and delicious!

 

WATERMELON WITH VEGAN FETA & BALSAMIC

Ingredients: 

- 2/3 cup balsamic glaze

- 1 watermelon

- 2 Tablespoons fresh lime juice

- 2 Tablespoons olive oil

- 1/4 cup fresh mint leaves, chopped

- 2/3 cup crumbled feta cheese or vegan alternative

How to: 

1. Cut watermelon into cubes or slices

2. In a small bowl, whisk together the lime juice and olive oil with a pinch of salt and pepper.

3. Pour the dressing over the watermelon, add the chopped mint and feta cheese, and toss to combine.

4. Drizzle the salad with the balsamic glaze and serve immediately.

So fresh and tasty!

 

VEGAN BANANA NICECREAM

Banana nice cream is a frozen dessert made with a frozen banana base. If you have frozen bananas and a little bit of milk (or any kind of liquid), then you can make banana nice cream!

Ingredients: 

- 4 cups frozen banana slices (2 large bananas)

- 2-4 tablespoons unsweetened almond milk any kind of milk will work

How to: 

1. Place frozen banana slices + almond milk into a high-speed food processor or blender.

2. Blend on high for 1 to 2 minutes stopping to scrape the sides every so often.

3. Serve immediately or freeze for later

Tip: Add chocolate chips, berries or any extra toppings!
