No-Bake Lemon & Coconut Cheesecake by Chloe Vegan

Ingredients: Base:

⁃ 3 x KOJA Lemon & Coconut Oat Bar

Top Layer:

⁃ 3/4 Cup Cashews (Soaked in hot water for 10 minutes and drained)

⁃ 1/4 Cup Coconut Yoghurt 

⁃ 1/2 Cup Oat Milk

⁃ 2-3 Tbsp Rice Malt Syrup

⁃ 1 Tsp Vanilla

⁃ 1 Tsp Lemon Zest

⁃ Pinch of Salt


1. Blend all top layer ingredients until smooth. Set aside.

2. Slice KOJA bars lengthways into 4 slices each. Line a bread tin or container with baking paper and place the bar slices in it. Press down to push slices together.

3. Pour over the top layer and set in the freezer for 4-5 hours or until set. Slice and enjoy!
