Vegan Mac & Cheese Recipe with Chloe Vegan

Cheese Sauce

⁃ 1/2 Cup Cashews (Soaked in hot water for 10 minutes and drained)

⁃ 3/4 Cup Oat Milk

⁃ 1/4 Cup Nutritional Yeast

⁃ 1 Tbsp Tahini

⁃ 1 Tbsp Lemon Juice

⁃ 1 Clove Garlic

⁃ 1/4 Tsp Smoked Paprika

⁃ 1/4 Tsp Turmeric

⁃ Pinch of Salt and Pepper


Other Pasta Ingredients:

⁃ 350g Pasta of Choice (Cooked until al dente)

⁃ 1 Head Broccoli (Chopped into florets)

⁃ 2 - 4 Tbsp Water

⁃ 1 Cup Frozen Peas



⁃ Parsley

⁃ Hemp Seeds

⁃ Chilli Flakes



1. Place all sauce ingredients into a food processor or blender and blend until smooth. Consistency should be thick but pourable. Add more oat milk if needed.

2. Heat a fry pan over medium heat. Add broccoli and water and cook for 5-7 minutes, or until it begins to get tender. Add peas and cook for another 3 minutes, or until hot. Stir in the sauce and pasta and remove from heat.

3. Serve and garnish. Enjoy! Store in the fridge for 4-5 days.
