Pita Chips with Guacamole

Avocados are full of healthy fats, and despite what you may think, are actually a type of berry!  Pairing avocado with fresh & zesty ingredients such as lime, tomato and coriander make for a delicious and wholesome way to enjoy this fruit.

Adding a high fibre, wholegrain vessel like our Crispy Pita Chips which are also packed with B Vitamins and much lower in salt than traditional corn chips, makes this a nutritious and balanced snack or light lunch.  

The entire recipe takes no more than 10 minutes and will be sure to keep you satisfied. 

Crispy Pita Chips Ingredients
Wholegrain Pita bread
Extra virgin olive oil
Smoked Paprika and salt (optional) to sprinkle

Chunky Guacamole Dip Ingredients
1 ripe Avocado
2 tbs Extra virgin olive oil
2 tsp Coriander or flat leaf parsley, chopped
Half a tomato, diced finely
1 Spring onion stem, chopped
½ Lemon or Lime

Method
Preheat oven to 220C.
Place pita bread triangles on a baking tray and brush with olive oil.
Sprinkle with a little smoked paprika and a pinch of salt (if you choose).
Bake in the oven for 5 minutes, or until crispy.
Leave to cool completely before storing in an airtight container. The pita chips will keep for 3 - 4 days.
Whilst the pita bread is in the oven, make the Guacamole
Mash avocado in a bowl with the back of a fork.
Add chopped spring onions, diced tomato, extra virgin olive oil, coriander or parsley.
Mix well and finish with a squeeze of lemon or lime!
