Warm Coconut Porridge

This recipe is so simple, yet so delicious, and the perfect thing to warm you up on a chilly Winter’s morning! 

We have given you the measurements of the ingredients that we used, but this recipe is so fail-proof and adaptable that you can make it without even measuring anything! Simply adjust the quantities of any of the ingredients if you wish until you get it to a consistency that works for you. 

 

WHAT YOU NEED:

(Serves 2)

-1 cup rolled oats

-1/2 cup coconut milk or coconut cream

-1/2 cup coconut water or water

-2 tablespoons chia seeds

-cinnamon and vanilla (as much as you like)

-your favourite KOJA Breakfast Topper

-optional extras: fruit, raw honey, additional coconut milk

 

HOW TO:

-In a pot or pan over low heat mix the oats, coconut milk/cream, water/coconut water, chia seeds, vanilla and cinnamon together until it's warmed through to your liking. It's really that easy!

-Place the mixture into two bowls, and top with whatever you desire! We topped ours with KOJA Daily (but any one of our Breakfast Toppers would be great!), as well as blueberries, coconut flakes, a little extra coconut milk and a drizzle of raw honey.

YUM!!!

 

NOTES:

*If you do want to add some honey for extra sweetness, it is best to add it after cooking, as heating honey destroys the beneficial and natural enzymes and nutrients within it. 

*Feel free to top the porridge with any thing else you would like, or swap the blueberries for other fruits, such as bananas, strawberries or chopped-up dates. 

*If you don't want a warm breakfast, this recipe tastes just as delicious when cold! Just mix the ingredients straight into a bowl, rather than heating over the stove. You may need to adjust the quantities of the ingredients a little, as some of the coconut milk tends to evaporate when cooked.
